Birch juice is a liquid leaking from cuts and cracked trunks and branches of a birch caused by a root pressure; it was widely used as a drink in the USSR in the middle of the XX century, contains B6, B12 vitamins. It is a drink of our childhood. A large tree can give about 7 liters of juice per day, and sometimes more. In order to avoid death of trees it isn't recommended to take juice from young trees. Gathering of birch juice begins in April and ends in May, depending on weather conditions of a region.
