Крем-суп со спаржей
For preparation of a creamy asparagus soup take 0,5 kg fresh asparagus, 200 g chopped onion, 1 litre vegetable broth, salt and spice, 1 teaspoon lemon juice and 150 ml yougurt, 50 g grated Parmesan cheese. Place asparagus and onion in a saucepan with vegetable broth. Bring the broth to a boil, reduce heat and let simmer until the vegetables are soft. Place vegetable mixture in an electric blender and puree until smooth. Stir the vegetable puree and yogurt with lemon juice into the saucepan. Add salt and papper. Boil 3 minutes. Then ladle into bowls and sprinkle with Parmesan cheese.
