Romanesko is one of cabbage cultivars. The name of vegetable indicates its origin from the neighborhood of the city of Rome. This vegetable was used as food in the XVI century, however in international markets it appeared in the nineties of the 20th century. This vegetable is rich in vitamin C, vitamin K, food fibers and carotinoids. Romanesko is very gentle on texture and has a soft creamy and nut taste.
